Where to buy "specialty" proteins?

Well, it's been a month and Ell's allergies are finally getting better (yay!). We've been doing the elimination diet and homecooking - no turkey, no stringbeans, no fish whatsoever, no chicken, and no potatoes - she's doing much better than she was a few weeks ago so thank you to everyone for your suggestions. I've also been giving her baths with oatmeal shampoo and bought Zymox to keep on hand. There's only one problem we've be running into - I can't find any more "exotic" types of protein to give her. I don't want her to develop a sensitivity to beef since that is the only thing so far she's not allergic to, but finding any other things is next to impossible!

All of the places I've seen sell raw meat and organ meat for raw feeding, but completely raw feeding actually didn't work for her - she couldn't digest it as well as she can cooked or freeze dried meat and I noticed her weight went down. My poor baby. I feel like we've tried everything at this point. I even looked at Fromm and any others to see if there were any that were just freeze dried meat, but they all have herring oil which she is highly allergic to. Is there something I'm missing?
 
Have you tried bison?

Jax has many environmental allergies as well as some food intolerances but he does well on bison. He also does well on rabbit. Jax eats raw and I know you said you homecooked but I am pretty sure I have seen ground bison at some stores before.
 
Grandma Lucy's makes a freeze dried rabbit food too.
